Ingredients
- ½ cup sifted self raising flour
- ½ cup dessicated coconut
- ½ cup chopped raisins
- ¼ cup fine sugar
- ¼ teaspoon salt
- 1½ teaspoons grated lemon rind
- 100g butter (melted)
- 1 egg (well beaten)
- 2 cups cornflakes (crushed)
Methods
- Combine all ingredients except butter, egg and cornflakes in a bowl.
- Add melted butter and beaten egg.
- Drop small balls of dough into cornflakes, rolling lightly to coat dough well and then flatten dough slightly.
- Place on lightly greased baking sheets allowing room for spreading when baking.
- Bake in the preheated oven at 180 degrees Celsius until golden brown for 12 -15 minutes.
