Ingredients

  • ½ cup sifted self raising flour
  • ½ cup dessicated coconut
  • ½ cup chopped raisins
  • ¼ cup fine sugar
  • ¼ teaspoon salt
  • 1½ teaspoons grated lemon rind
  • 100g butter (melted)
  • 1 egg (well beaten)
  • 2 cups cornflakes (crushed)

Methods

  1. Combine all ingredients except butter, egg and cornflakes in a bowl.
  2. Add melted butter and beaten egg.
  3. Drop small balls of dough into cornflakes, rolling lightly to coat dough well and then flatten dough slightly.
  4. Place on lightly greased baking sheets allowing room for spreading when baking.
  5. Bake in the preheated oven at 180 degrees Celsius until golden brown for 12 -15 minutes.
